Quinoa Salad with Grilled Chicken and Vegetables

Ingredients

2 Al YOUM chicken breasts, grilled and sliced ​​into strips
 

1/4 cup crumbled Almarai feta cheese
 

2 tablespoons Almarai olive oil
 

1 cup cooked and cooled quinoa
 

2 tomatoes, diced
 

1 cucumber, sliced ​​thinly
 

1/2 red onion, sliced ​​thinly
 

1/2 cup cooked green beans
 

Juice of one lemon
 

Salt and black pepper to taste
 

Lettuce leaves, sliced, for serving

Instructions
  1. Mix the cooled quinoa with the grilled chicken slices in a large bowl. Add Almarai olive oil and lemon juice, and gently mix until the flavors combine.
     
  2. Then add the tomatoes, cucumber, red onion, and green beans and gently toss them together. Season with salt and black pepper to taste, and toss again. Sprinkle the crumbled feta cheese on top of the salad before serving.
     
  3. Serve the salad on a bed of sliced lettuce leaves as a distinctive side dish.
