Chicken Kabsa Recipe

Ingredients

For Chicken:

 

1 kg chicken pieces

 

1 medium onion, chopped

 

3 cloves of garlic, minced

 

1/4 cup olive oil

 

1 teaspoon mixed spices

 

1 teaspoon cumin

 

1/2 teaspoon black pepper

 

Salt to taste

 

For Rice:

 

2 cups basmati rice

 

4 cups water

 

Salt to taste

 

For Serving:

 

Toasted nuts (almonds or pine nuts)

 

Chopped parsley

 

Lemon slices

Instructions
  1.  In a large skillet, heat olive oil and sauté the chopped onion until translucent.
     
  2.  Add the chicken to the skillet and brown it.
     
  3.  Add garlic and spices (mixed spices, cumin, black pepper, and salt).
     
  4.  Stir well until the chicken is coated with the spices.
     
  5.  Let the chicken cook on low heat until fully cooked and juicy.

    For Rice:
     
  6.  Wash the rice thoroughly to remove excess starch. In a pot, bring water to a boil and add salt.
     
  7.  Add the rice to the boiling water and let it cook for 15-20 minutes until done.

    For Serving:
     
  8.  Arrange the rice on a serving platter. Place the chicken pieces on top of the rice.
     
  9.  Serve the Kabsa garnished with toasted nuts and chopped parsley.
     
  10.  Serve with lemon slices on the side.
